Brewzym BGL is a food grade concentrated liquid β-glucanase derived from refined strain of Trichoderma reesei through cultivation and fermentation technique. β-glucanase was the main enzyme component, and the activity of pentanase, xylanase and cellulase was also observed.
The β-glucan in barley contains about 90% β-1，3 bonds and 10% β-1，4 bonds. Exogenous addition of β- glucanase can effectively supplement the deficiency of β-glucanase in malt and achieve better brewing effect.
